I was hoping someone would be able to tell from the attached picture what I need to adjust to correct this problem.
This is a 3rd party template purchased here on BoonEx. It has only been little over a week since I contacted the vendor the first time, but before I sent second email requesting help, I went to their site to test their demo, thinking it might be something I had done on my server. Their demo does the same thing.

This is not related to the template. This is related to the status message code itself. There is a character limit on the status message. Sometimes if you enter too much text, it will prevent the update from the status message block; although one can still edit the status message using the member menu bar. You would need to rewrite the status message code and css to allow it to expand.

I thought I was using an apples to apples comparison by using the identical text & volume for both templates. I've had the same results using more than four times the amount of words - Uni would expand to accommodate, but the other wouldn't. So this is a sporadic anomaly?

It does appear to be expanding. The extra words are under the blue block.
In this case it's a template problem. The blue space with the rounded corners where the first line of the status is is fixed in size. By design of the template.
So it does appear to be a template issue to me.
As for what to adjust. Not possible to tell from a picture. You should consult with the template developer.

On the demo site there is a character limit.

Yes. There is a limit. But on the default page width you should still see 1 and a half lines before it is truncated.
His blue bar is not expanding to show the rest of the characters on the second line.

OK, I understand now. I was looking at the top and did not noticed the bottom. This is where it helps to draw a box around the area you have a question on.
If you will PM me your site, I will see what I can find out. You need to turn CSS caching off so I can examine the CSS code.
