How do I change the gray/White background in Dolphin 7.1

You edit the CSS in the template files.  If you are using UNI, you edit in UNI, edit in the template you are using.  You need to read up on Dolphin a bit.  There is a HELP link above ^ on the black strip, a good place to start.
